Beef Stew Recipe
3 lb Beef Roast
1 Onion (chopped)
5 lb bag Carrots (peeled & chopped)
4 C. Red Potatoes (cubed)
1 Jar Spaghetti Sauce
3 Pieces of Bread (cubed)
2 C. Beef Broth
3 C. Water
2 Tbs. Butter
1 Tbs. Flour
1 Tbs. Parsley
1 Tsp. Salt & Pepper
Preheat your Oven to 400 F.
Chop the Onions, set aside. Peel and cut the carrots, set aside. Heat a skillet on Medium heat, add butter. When hot place your Roast in the pan. Sear on both sides. About 3 minutes each side. Place your Roast in the Roasting pan.
Add a little more butter. Toss your onions into the pan, stir. Add 2 tbs of water to the pan to release the meat drippings into the onions. Cook for 2 minutes and pour the onions into the roasting pan.
Pour spaghetti sauce over you roast, add your beef broth, carrots, potatoes, salt, pepper, parsley and 3 Cups of Water.
Cover with lid and bake in the oven for 3 hours. Use caution when removing the lid as steam will escape.
If you are using a Crock Pot instead of the oven cook on high in the Crock Pot for 3 hours.
Deconstructed Pumpkin Rolls
1 Can of Pumpkin
1 8 oz Package Cream Cheese
1 C. Sugar
3/4 Cup Flour
1 C. Confectioners Sugar
1 Tsp. Vanilla
1 Tsp. Baking Soda
1 Tsp. Cinnamon
2 Tbs. Butter (soft)
Preheat Oven to 375 F.
Beat eggs on high for 5 minutes. Add Sugar and Pumpkin, gradually. Add Baking Soda, Cinnamon and Flour.
Grease and flour muffin tins.
Add batter with a 1/8 C. measuring cup into the greased, floured, muffin tins.
Bake for 13-15 minutes in a preheated oven.
For the Filling:
Mix Confectioners Sugar, Vanilla, Butter and Cream Cheese for 2 minutes until creamy.
Spread on cooled pumpkin cakes then put the tops on. Cover and chill for an hour or two.
